Biscuits

Yo yos

175g (6oz) butter, softened
1/4 c icing sugar
1/2 tsp vanilla essence
1 1/2 c flour
1/2 c custard powder

Vanilla Filling
1 tsp vanilla
2 tsp boiling water
1 tbsp butter, melted
1 c icing sugar

Cream butter and sugar until light and fluffy and add vanilla essence. Sift the flour and custard powder and mix sifted ingredients into butter mix.
Roll small teaspoons of dough into balls and place on greased tray. flatten balls slightly with a fork.
Bake 180C for 12-15 minutes. Remove from the oven and allow to cool.

To make the icing – Mix the butter, vanilla, the boiling water and icing sugar.

Sandwich the biscuits together with the icing.

Another filling is – Custard Butter Filling
50 g butter, softened
½ cup icing sugar
2 Tbsp custard powder
Beat all ingredients together until well combined.
