1 tsp vanilla
180g plain flour
120g ground almonds
jam of choice, or lemon curd
Heat oven to 180C. Grease a baking tray or line with nonstick baking paper.
Cream butter and sugar. Add the vanilla, then the egg.
Add to this the flour and ground almonds. Mix them until they resemble breadcrumbs.
Using your hands bring it together into a ball, then divide into 12 equal portions.
Roll each portion into a ball and place onto the baking tray and press the centre down with your thumb, almost all the way through.
Add a blob of jam for thumbprint.
Bake for 15 minutes until golden brown, remove from the oven and allow to cool.
