Makes 12 regular muffins
2 c flour
3/4 c brown sugar
2 tsp baking powder, rounded
1 1/2 tsp cinnamon
1/2 c rolled oats
1/2 c sultanas
Pinch of salt
1/3 c milk
1/2 c canola, olive, or grapeseed oil
1/2 c yoghurt
2 eggs
¾ average size carrot, grated
¾ average size banana, mashed
Method
In a large bowl mix together the flour, brown sugar, baking powder, cinnamon, rolled oats, sultanas, and salt.
In a smaller bowl mix together the milk, oil, yoghurt, eggs, carrot and banana.
Add this to the dry mix. gently stir in with a fork.
Line muffin tins with baking paper, fill and bake at 180degC for about 20 minutes.
