1 onion, finely chopped
1 carrot, grated
1/3 cup (33g) panko breadcrumbs
1 egg
1 medium apple, grated
6 sausages
2 pastry sheets
Method
Preheat oven to 200ºC.
Line an oven tray with baking paper.
Sauté onion and carrot on a medium heat for 3 minutes, set aside to cool.
Place in a processor along with breadcrumbs and egg. Process until mixed.
Slice open the sausages and remove contents into a large bowl.
Add the bread mix to the bowl along with grated apple and mix by hand until well combined.
Place 1 pastry sheet on the workbench and cut in half horizontally.
Spoon one quarter of the mixture along one top edge of each pastry piece, spread like a large sausage.
Roll up pastry top down tightly to enclose filling, roll to seal (fold side under).
Cut into sausage rolls.
Place rolls, seam side down, on the baking tray. Repeat the process with the other pastry sheet and mix.
Bake 25 to 35 mins until golden and risen.
