Sage and Onion Stuffing

1 lge onion
6 slices white bread (or 3 homemade) 1 day old
a handful of sage leaves or 2 teaspoon of dried sage
50g (2oz) soft butter
salt and pepper to taste

Place onion in food processor and process until fine. Add bread and sage and process until breadcrumbs, add butter. Mix all together to make a firm ball (add more butter if required).
Place inside meat.
