Prepare the following and place in a dish
1 c rice, cooked
1 sml onion, finely chopped (food processor)
1 cup sweetcorn in brine, drained (or 1 cup frozen corn)
1 apple cut into very small cubes (lightly in food processor)
4 tbsp sultanas
Mix
Combine the following in a small bowl
135 ml cider vinegar
1 1/2 dsp sugar
salt and pepper
45 ml grapeseed oil
1 1/2 tsp curry powder
Stir
Pour over rice etc in the dish. Mix. Leave for a few hours for the flavours to come through.
