175g butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
2 3/4 cups flour
2 tsp baking powder, rounded
Cream butter and sugars. Add egg and vanilla. Add dry ingredients. Divide into two portions, and shape into a log. Wrap each portion in gladwrap and refrigerate until firm. Cut 5mm thick slices. Greased tray, 180°C for 15-18 minutes.
Keeps for 1 week in the fridge, or 4 weeks in the freezer.
Variations:
Add 1 cup chocolate chips.
Add the zest of a lime and 1 cup coconut.
Divide dough in half. Add 1 Tbsp cocoa to one half. Roll each portion out on baking paper and lay one on top of the other. Roll up into a firm log.
