600g potatoes, cut into little squares, cooked and cooled
3 tbsp chopped chives
1/2 c mayonnaise
Scrub potatoes
Cut into 1 1/2-2cm cubes
Bring to boil
Simmer for 5-10 minutes until knife goes in without resistance
Drain
Run under cool water to stop cooking process
Refrigerate
Mix the chives and mayonnaise together, allow to infuse in the refrigerature for 5 hours. Add to potato. Gently mix it all together.
