275g butter, softened
1/4 tsp vanilla
1/2 c icing sugar
1 1/2 c flour
1/2 c cornflour
Cream butter, vanilla and icing sugar. Sift dry ingredients.
Mix all together.
Roll into small balls, flatten with a floured fork.
Bake 180°C 12 mins.
Sandwich together with Vanilla icing.
Icing variations are – ginger, lemon, orange, & chocolate.
Alternate version:
1 cup (150g) self raising flour
1 cup (150g) cornflour
250g butter at room temperature
1 tsp vanilla
4 tbsp icing sugar, sifted
