1 c soft butter
1 c icing sugar
1 tsp lemon flavouring
1¼ teaspoon salt
2½ cups sifted flour
Sift sugar into butter and cream until light in colour and fluffy.
Add flavouring and salt, mixing well.
Add flour and mix well.
Shape into rolls 1 – 1 1/2 inches in diameter and wrap in waxed paper.
Refrigerate until firm or freezer-wrap, date, label and freeze
To Bake
Preheat oven to 350ºF (180ºC).
If frozen, thaw until soft enough to slice without crumbling.
Using a serrated knife cut into 1/8 inch slices.
Lay cookies on an ungreased cookie sheet and bake for 8 – 10 minutes or until delicately brown.
