75g butter, softened
3/4 cup sugar
1 egg
3/4 c milk
1/4 c lemon juice
2 c flour
3 tsp baking powder
Grated rind of a large lemon
Beat butter and sugar in a bowl until pale and fluffy. Beat in eggs, milk, and lemon juice.
Add the dry ingredients and lemon rind, and just lightly combine, don’t overmix.
Spoon mixture into 12 well greased muffin tins and bake at 200ºC for 10 -12 minutes.
