Lemon butter cookies (biscuits)

1 c flour
1/2 tsp baking powder
115g butter, softened
1/2 c sugar
1 egg
a few drops vanilla
2 tsp fresh lemon juice
1/2 tbsp finely grated lemon zest

Cream butter and sugar in a large bowl. Beat in egg and vanilla.
Add sifted dry ingredients and mix until just combined. Mix in lemon juice and zest.

Roll dough into a log in plastic wrap. Chill dough until firm.

Cut into sllices and place on baking trays. Return remaining dough to fridge.
Bake 180C for 12 minutes.
