Judy Bailey’s Apple Cake

2 apples chopped
1 cup sugar
125g melted butter
1 large egg, beaten
1 1/2 c flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1 cup sticky raisins
1/2 c chopped walnuts

Put apples in a large mixing bowl with sugar, stir & stand for a few mins. Blend butter and beaten egg into the apples
Sift the dry ingredients and add to the apples, stirring until just mixed. Lastly add raisins and walnuts.
Put into a loose bottom flan tin. Spread around – mixture is very stiff. Sprinkle a few walnuts on top and bake at 180 for 45 mins.
