Small cakes & muffins

Ginger Gems (Annie Jackson’s)

50gms butter
1/2 cup of brown Sugar
2 Tbsp of Golden Syrup or Treacle
1 egg
1 cup of Flour
1 tsp spice ginger
1 tsp Cinnamon
1 tsp Baking soda
1/2 a cup of warm milk

Melt butter, add sugar syrup, egg and then flour & spices.
Dissolve the baking soda in the warm milk and the combine with other ingredients.
Pour into hot greased Gem iron.
Place in a hot (180 degrees) Oven on fan bake for 15 -17 mins.
