400g hoki, or fresh salmon, or preferred fish
4 or more cooked mashed potato’s
1/2 leek (decent size)
butter
salt & pepper
1 1/2 tbsp flour
pinch dried mustard
Cook fish wrapped securely in tin foil with a tablespoon of butter in oven for 15 mins 180°C.
Saute chopped leeks in one tablespoon or more of butter.
Add flour, dried mustard, salt and pepper to taste to leeks, adding about 600ml milk (making a white sauce). Stir over med heat till thick.
Add cooked fish, including juices.
Place in oven proof dish.
Spread mashed spud on top, grill till golden.
