Small cakes & muffins

Chocolate cupcakes

125g butter, softened (1/2 c)
200g sugar (1 c)
2 eggs
25g cocoa (1/2 c)
1 tsp baking powder
1/2 tsp baking soda
200g flour ( 1 2/3 c)
1 c milk

Cream the butter and sugar well till light and fluffy.
Add in one egg at a time. Continue beating until combined.
Sift dry ingreds. Add to creamed mix along with the milk. Beat well.
Using an ice cream scoop or dessertspoon, fill the liners to about 2/3 full.
Bake 190C for 15-17 minutes.
Let the cupcakes cool before frosting.

Chocolate Cupcakes with Ganache Filling
Ganache Filling
60g (2oz) bittersweet chocolate, chopped fine
1/4 cup cream
1 tbsp icing sugar
Melt all together over a double boiler, beat together.

Half fill each cupcake paper with cupcake mix. Place half a teaspoon of the ganache filling on top of each cupcake. Dob a teaspoon of mix on top.

When cold ice with Vanilla butter cream frosting.
