Pasta Dishes

Easy tomato pasta bake – slow cooker

This is a great cheap meal, serve with a salad or vegetables.

INGREDIENTS
250g pasta, penne works well
1 medium onion
1 1/2 tins of tomatoes, chopped
a couple of handfuls of grated cheese

1. Preheat the crock pot on high.
2. Cook the pasta in a large pot of boiling salted water until cooked
3. While it is cooking, in a medium size pot, sautée the onion in butter, then add the chopped tomatoes. Bring to a boil then place in the crock pot.
4. Add the cooked pasta to the crock pot. Cook for 1 hour.
5. Scatter over the top the grated cheese and cook for another 5 minutes until bubbling. Serve.

Macaroni and Cheese

Basic Baked Mac and Cheese, a good ole staple.
Makes 6 to 8 servings

Total cook time 70 minutes

250g dried Macaroni Elbows, cooked in 2L salted boiling water and drained (15 min to come to boil, boil for 30 minutes)
2 tbsp butter
2 tbsp flour
1 pinch dry mustard
1 pinch salt
2 cups milk
100 g ham
2 cups grated Cheddar cheese
1/2 c panko breadcrumbs
1 tbsp butter

Preheat oven to 190°C (375°F).
In a medium saucepan, melt butter, then stir in the flour, mustard and salt. Gradually stir in the milk with a spatula or whisk.
Cook and stir until mixture thickens slightly (mixture should coat spoon).
Remove from heat. Add ham, then cheese; stir until cheese is melted.
Stir in cooked macaroni.
Turn into greased 1 1/2 litre (1 1/2-quart) shallow baking dish.
Sprinkle over the breadcrumbs before dotting with the butter.
Bake 20 minutes or until bubbly. Refrigerate leftovers.

VARIATIONS: Add any of the following to macaroni before baking:
1 220g (7-ounce) can tuna or salmon, drained and flaked OR
1 1/2 cups cubed cooked chicken or turkey OR
1 1/2 cups cubed cooked ham or luncheon meat OR
250g (1/2 pound) frankfurters, sliced diagonally into fourths OR
250g (1/2 pound) sliced smoked sausage OR
1 315g (10-ounce) package frozen chopped broccoli or spinach, thawed and well drained OR
2 tablespoons each chopped onion and pimiento. Top with cornflake crumbs.

TIP: To double recipe to make 10 to 12 servings, use 1 500g (1-pound) package Macaroni Elbows, 1/2 cup butter, 1/3 cup unsifted flour, 2 teaspoons dry mustard, 2 teaspoons salt, 4 cups milk and 4 cups (1 pound) shredded Cheddar cheese. Proceed as above; combine in large bowl. Turn into greased 3-quart shallow baking dish (13×9-inch) OR 2 1 1/2 litre (1 1/2-quart) shallow baking dishes. Bake 25 to 30 minutes.
Or, casserole can be tightly covered and frozen unbaked. To bake frozen macaroni and cheese, preheat oven to 190°C (375°F). Bake frozen casserole, uncovered, 1 hour and 15 minutes or until bubbly and hot in centre.

Spaghetti & Meatballs

Serves 4

INGREDIENTS
2 teaspoons olive oil
1/2 medium onion, chopped (1 tsp dried)
2 garlic cloves, minced (1 tsp dried)
1/2 cup seasoned bread crumbs
1/4 cup grated Parmesan cheese
1 large eggs, lightly beaten
1/2 teaspoon each dried basil, oregano and parsley flakes
1/2 teaspoon salt
500g lean ground beef (90% lean)

350-400 g Spaghetti

Sauce
1 tin italian whole peeled tomatos, chopped
1/2 tbsp olive oil
2 cloves garlic crushed (1 tsp dried)
1 onion chopped (1 tsp dried)
Pinch dried basil
1 tbsp tomato paste (or 1/4 c puree)
1 tsp sugar – or to your taste
Salt and pepper if desired

METHOD
Preheat oven to 375°. In a small skillet, heat oil over medium-high heat. Add onion; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Cool slightly.
In a large bowl, combine bread crumbs, cheese, eggs, seasonings and onion mixture. Add turkey and beef; mix lightly but thoroughly. Shape into 1-1/2-in. balls.
Place meatballs on a rack coated with cooking spray in a 15x10x1-in. baking pan. Bake until lightly browned and cooked through, 18-22 minutes.

Cook the pasta sauce, and leave simmering.
Cook spaghetti as per packet instructions.

Add meatballs and sauce to drained spaghetti and serve.

Lasagne

A family dinner classic.​

Prep time 15 minutes, plus additional 8 minutes assembly
Cook time 1 hour 5 minutes, including rest time

INGREDIENTS
500g lean beef mince
¾ cup grated cheese
250g wide lasagne, cooked
2 Tbsp grated cheese, extra for top

TOMATO SAUCE:
2 Tbsp butter
1 onion, chopped
1 carrot, grated
3 cloves garlic, crushed (1 1/2 tsp dried)
2 × 400g cans tomatoes in juice, chopped
1/4 cup tomato purée
½ tsp oregano
½ tsp basil
1 tsp sugar
salt
pepper
1 tbsp flour

WHITE SAUCE:
50g butter
1½ Tbsp standard flour
1½ cups milk
salt and pepper, to taste

METHOD
Heat butter in a large pot. Add onion, carrot and garlic. Sauté over a medium heat until onion is golden. Add the Tomato Sauce ingredients. Add meat. Stir well. Bring to the boil. Place in a medium sized crockpot and cook for 1 1/2 hours. Set aside.

To make the white sauce: gather ingredients. Melt butter in a small saucepan. Add flour and cook until combined. Gradually add milk, stirring constantly until mixture boils and thickens.
Remove from heat. Season with salt and pepper to taste.
Cover with a lid to prevent a skin forming. Set aside to cool slightly.

To assemble: In a greased ovenproof dish, spread 1/3 of the meat mixture, then 1/3 of the sauce, a sprinkling of the cheese. Place a layer of lasagne sheets. Repeat the layers. finishing with a sauce layer. Top with extra grated cheese.

Cook for 50 minutes or until golden and heated through in a 170˚C oven. Let rest 15 minutes before serving.

Spaghetti Carbonara

Spaghetti carbonara is a crowd-pleaser if ever there was one – eggs, cheese, bacon and pasta. And ready in the time it takes to boil spaghetti. This is designed to be a low cost recipe.

Cooking time 10 to 30 mins
Serves 4

400g/14oz spaghetti
1 tbsp olive oil
200g/7oz bacon, cut into thin strips
1 garlic clove, peeled and finely chopped
4 egg yolks
40g/1¾oz grated Parmesan or pecorino
50ml/1¾fl oz full-fat milk
salt and pepper

Method
In a large saucepan of salted boiling water, cook the spaghetti according to the packet instructions.
Meanwhile, heat a large frying pan over a medium heat. Add the oil and, once hot, add the bacon and fry for 2–3 minutes, or until cooked through but not colouring. Add the garlic and cook for a further minute and then remove the pan from the heat.
In a bowl, mix together the egg yolks, the Parmesan (or pecorino) and the milk. Season with a pinch of salt and a decent amount of pepper. Mix well.
Once the spaghetti is cooked, drain it, reserving a teacup of the cooking water. Pour the drained spaghetti into the frying pan (still off the heat) with the bacon and garlic. Immediately pour over the egg mixture and mix really well, tossing the pasta so that it is all coated in the egg. If it looks to be getting too thick or sticky then loosen with a little of the pasta cooking water.

Carbonara (Italian)

250g fettuccini or similar pasta
1 tsp salt
2 egg yolks
1 1/2 rashers of bacon
4 tbsp grated parmesan cheese, heaped
olive oil
salt and pepper to taste

1. Bring to the boil a large pot of water and add salt. Add the pasta and cook until done.
2. While the pasta is cooking, fry (SAUTE/BROWN) the bacon. Remove from the heat and set aside, do not discard the fat or oil.
3. In a bowl, combine the two egg yolks and set aside.
4. Once the pasta is cooked, use a pair of tongs to move the pasta to the bacon in the frying pan and turn up the heat, don’t worry about the excess water as this will cook off. Mix the bacon and oil through the pasta, ensuring that it doesn’t stick to the bottom of the pan.
5. Once the pasta is coated in the oil, add the egg yolks and the parmesan cheese and fold through the pasta.

Add a bit of pepper and enjoy.

Pumpkin & ham pasta

The sauce is made from:
2 or 3 cups thin white sauce with added –
200 grams shaved ham
1 cup cooked pumpkin
1/2 c cheese (I use edam)

Add this to half a packet of cooked pasta.

Pasta (home made fresh)

Few things give great satisfaction than home-made egg pasta, served with a good sauce.

300g flour
3 eggs
1 tbsp olive oil
1 tsp salt

Sift the flour and arrange on a mound on work surface.
Add the eggs, oil and salt and beat these three ingredients with a fork, incorporating the flour gradually until it completely covers the inside. Knead the dough vigorously, pulling.
Form a loaf wrap in plastic wrap to let it rest for at least 1 hour.
Now you can prepare the dough in the shape of your choice.

Measures:
To get a good mix, ensure all the ingredients are at room temperature.

Ideas and options:
Depending on the type of pasta that you want to prepare you can use other types of flour. For fettuccine noodles you can add egg yolks.
To roll out the dough for your homemade pasta you can use a simple rolling pin or special machines.

Remember lasagne and cannelloni require pre-cooking. Drop into heavily salted water boiling water and cook until al dente. Then throw into cold water to stop the cooking process.

Spaghetti Bolognese

1 Tbsp olive oil or butter
500g lean beef mince

Bolognaise sauce
1 onion, finely chopped (or 1 tsp dried)
1 x 400g tin tomatoes, chopped
1/2 tsp dried oregano
1 clove garlic (1/2 tsp dried garlic)
2 tsp sugar
1 tsp salt
black pepper

375g spaghetti (dried)
grated cheese

Add the mince to the bolognaise sauce, stir well. Add flour, stir.
Place pot onto medium heat and mix through until brought to boil. Put into a slower cooker on high and cook for 1 1/2 hours. add more flour if needed.

Fill pasta casserole dish 1/2 way with water, add 1 tsp salt and bring to boil. Add spaghetti noodles, slowly twisting to get the lid on. Bring back to boil and turn slightly lowered to upright position on dial. Cook for approx. 30 minutes or until noodles are white and aren’t chewy. Drain pasta (WITH COLANDER).

To serve, divide the cooked spaghetti between four dishes, spoon equal portions of Bolognese sauce over each and sprinkle with grated cheese.
