Cut ‘N’ Come Again Loaf

Two cups of sugar
Two tablespoons butter
500g Sultanas
Two cups of water
Four cups of flour
Pinch of salt
One teaspoon baking soda
One teaspoon mixed spice

Put into saucepan – sugar, butter, sultans and water. Bring to boil, simmer for five minutes. Cool well
Have ready in a bowl – flour, salt, mixed spice and baking soda. Poor cool liquid into dry ingredients, mix well
Bake in two loaf tins for one and a half hours at 350deg
Enjoy with wine or whatever,

Easy Fruit Loaf

400gm dried fruit of choice
1 cup hot black tea (or water)
1 cup soft brown sugar
2 cups self-raising flour
1 beaten egg

Soak the dried fruit overnight in the black tea.
On the following day mix all the ingredients (including tea) together, then place into a greased loaf tin.
Bake for 2 hours at 160 C.

Brownie Loaf

2 c flour
2 tsp baking powder
1 c sultanas
1 c brown sugar
1 tbsp butter
1 tsp mixed spice
1 tbsp cocoa
1 c milk

Pre-heat oven to 180C and grease & flour or line a loaf tin.
Sift flour, baking powder, cocoa and spice into a bowl. Rub in butter. Add brown sugar and sultanas and stir to combine. Stir in milk and pour batter into prepared loaf tin.
Bake for 45 mins.

Notes
This loaf is best eaten the same day it is cooked…. delicious spread with butter.

Fruit Loaf

2 c water
2 c sugar
2 c sultanas or 2 c mixed dried fruit
2oz butter
3 c flour
1 tsp mixed spice
1 tsp cinnamon
1 tsp baking soda

Heat gently together in a pot on stove top the water, sugar, dried fruit and butter until butter melts and sugar dissolves. Allow to cool for a few minutes then stir in flour and spices and baking soda.
Pour into a large loaf pan which has been greased and floured or bottom lined with baking paper and bake at 180°C for 45 minutes or until a cake tester comes out clean.
Remove from oven and leave to cool in tin for 10 minutes then tip out onto a wire rack to finish cooling.
Serve cut in slices and buttered.

Date and Walnut loaf

60g butter
1 c (250ml) boiling water
1 c (180g) chopped seeded dried dates
1/2 tsp baking soda
1 c (220g) packed brown sugar
2 c (300g) flour
2 tsp baking powder
1/2 c (60g) chopped walnuts
1 egg, lightly beaten

Line a loaf tin.

Stir the butter and the water in a medium saucepan over low heat until the butter melts. Remove from heat and stir in the chopped dates and baking soda. Add the remaining ingredients and mix until combined.

Place the tins upright on a baking tray, spoon the mixture into the tins (just over half way each) and replace the lids. Bake the rolls 180°C for 45 to 50 minutes. Stand for 10 minutes then remove the ends of the tins and shake tins gently to release the rolls onto a wire rack.

Banana loaf

1 3/4 c flour
1 1/2 tsp baking powder
1/4 tsp baking soda
2/3 c sugar (125g)
2 eggs
1/4 c milk
125 g butter, melted
1 tsp vanilla
3 bananas, mashed
1/2 c walnuts (optional)

Sift flour, baking powder, and baking soda into a bowl.
Mix in sugar.
In another bowl beat eggs.
Stir in milk, butter, vanilla and banana.
Mix quickly into dry inredients, stirring until ingredients are just combined.
Spoon into a greased and lined 22cm loaf tin.
Bake at 180C (350F) for 45-55 minutes.
Leave in tin for 10 minutes before turning out onto a wire rack.

Apricot loaf

1 c dried apricots, chopped, pre-boiled 5 mins and left to soak for an hour, then drained.

100g butter
1 c sugar
2 eggs
1/2 c milk
1 3/4 c flour
1 1/2 tsp baking powder
1/2 tsp vanilla

Cream butter and sugar, add vanilla and eggs. Beat.
Fold in dry ingreds, add apricots and milk.
Bake 180C 50-60mins.

Lemon yoghurt loaf

210g flour
2 tsp baking powder
1/2 tsp salt
50g butter, softened
1 c plain yoghurt
1 c sugar
3 large free range eggs
the finely grated zest of 2 lemons
1/2 tsp vanilla

Butter and line a loaf tin with baking or waxed paper.
Whisk together the butter, yoghurt, and sugar in a bowl. Beat in the eggs, lemon zest and the vanilla. Slowly whisk in the sifted dry ingredients. Pour into the loaf tin.
Bake 180C for 50 minutes, or until well risen and a toothpick inserted into the centre comes out clean.
Allow to cool in the pan for about 10 minutes before removing.

Pikelets

1 c flour
3/4 t baking soda, level
3/4 t cream of tarter, slightly heaped
1 egg
2 Tbsp sugar, rounded
3/4 c milk approx
1 tbsp butter melted

Mix sifted dry ingredients and sugar together.
Add egg to the milk.
Add half the milk mix to the dry ingreds. Mix, add the butter, then add the remaining milk till a thick consistency.
Heat a pan and use a little butter to grease.
Drop heaped tablespoonfuls of mixture into the pan. When the tops start to bubble, flip over and cook for a few minutes on the other side.
Keep warm under a tea towel.

Gingerbread

125g butter
1/2 c milk
2 tsps baking soda
1 1/2 tsp ginger
2 c flour
2 tbsp golden syrup
1 c sugar
1/2 milk
1 tsp mixed spice

Gently melt butter, golden syrup, 1/2 cup milk and sugar over a low heat.
Dissolve baking soda in the other 1/2 cup of milk.
Cool the melted mixture then add the dissolved baking soda and milk.
Add the sifted dry ingredients and stir quickly to mix. Do not overmix.
Pour into 2 greased loaf tins or 1 cake tin.
Bake at 200°C (390°F) for 20-30 minutes.
