Porridge

Ingredients

# serves Rolled oats Water & or milk
1 ½ cup 1¼ cups
2 1 cup 2¼ cups
3 1½ cups 3½ cups
4 2 cups 4½ cups
6 3 cups 6¾ cups
8 4 cups 9 cups

Add one pinch of salt per half a cup of porridge.

Directions

Ingredients are best mixed the night before and left to soak

  • mix rolled oats and ingredients in a solid bottomed saucepan
  • add water or milk
  • bring to boil, stirring continuously
  • simmer and stir over a moderate heat for 2 to 3 minutes, until desired consistency is reached
  • stir and serve.

(To help with the cleaning, ensure the saucepan is filled with cold water immediately after serving)

SLOW COOKER
Put all ingredients in a bowl, cover with tin foil or a lid, and put into into your crockpot on a trivet or upturned saucer. Fill the crock with water half way up the bowl. Put the lid on the crock-pot and cook on low overnight. Stir well before serving.

Ratio of ingredients are 1 rolled oats to 2¼ parts liquid

Vanilla french toast

2 eggs
1/2 c milk
1 tsp sugar
1 tsp vanilla extract
Pinch salt
6 slices day-old bread
Maple syrup or cinnamon-sugar

In a shallow bowl, beat eggs; add the milk, sugar, vanilla and salt. Soak bread for 30 seconds on one side, then very briefly the other. Cook on a greased hot griddle until golden brown on both sides and cooked through. Serve with syrup or cinnamon-sugar.

Yield: 2 servings.

Cheese rolls

2 tbsp cornflour
10 tbsp milk
1/3 small onion, finely chopped
250g mild cheese, grated

12 bread slices

Mix all ingredients in a large bowl, using a potato masher to combine.
Spread the mixture on bread slices and roll up.
Toast by grill in the oven, turning when brown on one side.
Spread with butter to serve.

English muffins

also known as muffin splits

2 1/2 – 3 cups (350g-420g) flour
1 tbsp instant yeast
2 tsp sugar
1/2 tsp salt
2 c warm milk
1 egg beaten
1 tbsp butter
About 1/4 cup flour, Semolina, or cornmeal (polenta)

In a large bowl combine the instant yeast, sugar, flour and salt.
In a small pan, melt the butter then add the milk and heat gently. The liquid should be warm but not hot.
Make a well in the centre of the flour and pour in the butter and milk mixture. Use a knife to mix to a soft dough.
Leave to ferment for 10–15 minutes.
Roll on a floured (or Semolina, or cornmeal) bench to 1 cm thickness. Cut into circles using a large 10cm cutter. Re roll the trimmings. Rest for 28–30 minutes. Preheat oven to 245ºC.
Spray the oven with water. Drop muffins onto preheated, floured hot trays. After 4 minutes baking, muffins are turned over and baked for a further 3.5 minutes before reducing the oven to 165ºC, cook 10 mins further until lightly golden.

To serve split muffins in half and toast lightly and coat with lashings of butter and jam, honey, or whatever else you fancy. Or toasted in the morning for breakfast….yummy!

Cook’s Tip: If you are planning on freezing the muffins, split them first, they’ll defrost quicker.

For spicy fruit muffins

Add to the dry ingredients
1 tsp allspice
1 tsp cinnamon
1/2 tsp mixed spice
1/2 cup sultanas the have been pre-soaked in boiling water for a few minutes to plump them up

Crumpets

1 1/2 c hot water
1 c milk
1 tbsp instant yeast
1 tsp sugar
2 c flour
1 tsp salt

Whisk together all ingredients (in the order given) until well combined, stir vigourously for a few minutes. Cover with plastic wrap and leave to stand in a warm place until the mixture is bubbly and doubled in size, this will take about 30 minutes or so. Don’t stir once it has risen or it will knock the air bubbles out.

Heat a pan on a very low heat, and spray the base, also the insides of a few egg rings (or used small fish tins with both ends taken off). Cook very slowly until bubbles form and pop, and the top of the crumpet dries out, this takes ages, about 4 minutes, then flip over and cook the other side for a minute or two until golden brown. Toast and enjoy.

1 egg can be added to the batter if wished.

American pancakes

50g butter, melted
2 eggs
1 teaspoon vanilla
1 c milk
1 1/2 c flour
1 tsp cream of tartar
1 tsp baking soda
2 1/2 tbsp sugar

Beat until no longer lumpy (do not overbeat! ). Use a ladle to pour batter into a hot pan lightly greased with melted. When one side bursts into bubbles turn over and cook until the middle springs back when touched.

Serve with butter and maple syrup.

Add mashed bananas or blueberries to the mixture for a different take.

Deviled eggs

6 hard boiled eggs
3 tbsp of mayonnaise
1 tbsp chopped parsley
Salt/pepper to taste

To cook the eggs, drop gently into boiling water for 7mins.
Cool down in cold water and peel.
Cut egg 1/2 length wise and scoop out the without breaking the white. 
In a bowl mix the yolks, mayo and parsley thoroughly and put into a piping bag and pipe back into the white.
