310g (11oz) butter
150g (5 1/2oz) sugar
1 egg
450g (1lb) flour
1 sml tsp b/soda
1 tblsp syrup
1 dsp cocoa
1 dsp cinnamon
1 dsp mixed spice
1 dsp cassia (if cassia can not be found use mixed spice)
Beat butter and sugar together, add egg, and syrup. Beat and then add dry ingreds.
Roll out tray half mixture. Spread on raspberry jam and then roll out other half and place on top.
Bake 180°C 20 mins and when cold ice, sprinkle jelly crystals on top, and cut in squares.
*The original recipe called for 1 tblsp burnt sugar as well
