Biscuits

Basic biscuits – plus variations

125g (4oz) butter, softened
3/4 c sugar
1 tsp vanilla essence
1 egg
2 c flour
1 tsp baking powder

Cream butter, sugar and vanilla together until light and fluffy
Add egg, beating well.
Sift flour and baking powder together and mix into creamed mixture.
Roll heaped teaspoonsful of mixture into balls and place on oven tray
Flatten slightly with a flavoured fork.
Bake at 180 C for about 12 minutes until golden.

Variations:
Chocolate – 2 tbsp cocoa powder
Lemon – 2 tsp grated lemon, 1 tbsp lemon juice
Spice – 1 tsp mixed spice
Orange – 1 tbsp grated rind
Sultana – 1 c sultanas
Choc chip – 1/2 c choc chips
