Small cakes & muffins

Apple and cinnamon muffins

2 Cups Flour
2 tsp baking powder
A Pinch salt
3/4 Cup Brown sugar
2 tsp Cinnamon
1 Egg – lightly beaten
115g Butter, melted
1 1/2 c tin of Pie Apple, or lightly cooked cubed apple
1/2 Cup Yoghurt
*a small amount of extra sugar and cinnamon mixed together

1. Preheat your oven to 180 degrees C .
2. Lightly grease a muffin tin with a little butter. Mix the extra cinnamon and sugar together and keep to one side in a small bowl.
3. Sift the flour i& baking powder nto a big mixing bowl and add all the other ingredients.
4. Stir gently until they are all combined.
5. Spoon the mixture into your muffin tin. Sprinkle the extra cinnamon and sugar on top.
6. Bake for 20 minutes. Once you can smell the muffins, they are probably cooked. It is always a good idea to check by inserting a skewer into the middle of one. If the skewer comes out clean, they’re cooked.
7. Remove the tray from the oven and allow the muffins to cool slightly in the tin.
8. Enjoy while still warm.
